Black Bean and Quinoa Burgers

Ingredients

  • 200 grams quinoa
  • 1 large onion
  • 2 cloves garlic
  • 1/2 kilo black beans
  • 150 grams finely chopped cilantro
  • 200 grams flaxseed flour
  • Cumin, oregano, and salt to taste

Preparation:

 Begin with equal parts quinoa and cold water, and cook for 15 minutes on low heat.  Remove the quinoa from the heat, and set aside.  Cook the beans for an hour and a half, or until they are soft.  Set aside.  Cut and chop the onion.  Put the onion in a bowl with the cloves of garlic and beans, and then blend the contents in a blender.  Add the quinoa, flaxseed flour, spices, and cilantro. Stir all ingredients until well mixed.  Using your hands, take a little of the mixture and form 5 centimeter balls.  Place these in a pre-oiled oven pan, and flatten them slightly.  Cook for 20 minutes at 200º (the oven should be preheated).  Then, turn the burgers and reduce the temperature to 150º, cooking for 10 more minutes.

Note:  You can add a grated carrot to create a spongier burger.
