200 gr. – Chickpeas, cooked
200 gr. – Pumpkin, cooked
150 gr. – Sugar
1 – Egg
100 gr. – Butter, at room temperature
200 gr. – Flour
50 gr. – Chocolate chips
1 Tsp. – Cinamon
1 Tsp. – Ginger
1 Tsp. – Baking powder
1 Pinch – Salt
Pre-heat oven at 170º C. prepare a baking tray with parchment paper.
Sift together flour, cinamon, ginger, baking powder and salt, set aside.
Drain the cooked pumpkin. Using an electric mixer purée the chickpeas, pumpkin and egg. Set aside.
Whisk butter and sugar until fluffy. Add the purée, mix well. Add the dry ingredients. Using a spatula mix well until all the ingredients are well incorporated. Add the chocolate chips or currants and mix again.
With two spoons drop tablespoons of dough onto the prepared baking sheets. Bake for about 10-12 minutes, until golden. Remove from the oven and let them cool.
